Ingredients

  • 2 1/2 cups orzo
  • 1 clove garlic, minced
  • 1/4 cup chopped red onion
  • 1/4 cup freshly chopped parsley leaves
  • 1 lemon, zested and juiced
  • 1 tablespoon olive oil
  • 1/4 cup freshly grated Parmesan
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Cook orzo as directed on package.

In a large bowl, toss together orzo with remaining ingredients. Can be served warm or chilled.

    LOVE this! We like to serve this with lemon salmon and green beans in a lemon butter sauce, lots of lemon but goes together so well!! We use gluten free corn orzo and leave the cheese out for a lactose intolerance but you wouldn't know we left the cheese out : such amazing flavor!

    It was really nice and light. It's a pleasant side dish I can always rely on. I recommend adding chicken or shrimp to make it more of a main dish type meal.
