Sunny's Green Garlic Herbed Butter

2 cups loosely packed fresh parsley

2 sticks salted butter, cut into cubes 

1 tablespoon Italian seasoning 

6 cloves garlic 

Zest of 2 lemons plus 2 tablespoons lemon juice

2 scallions, white and green parts, cut in quarters 

Kosher salt and freshly ground black pepper


  1. In a food processor, add the parsley, butter, Italian seasoning, garlic, lemon zest and juice, scallions, a nice pinch of salt and a few grinds of black pepper. Blend until smooth; taste and season with more salt if needed.
  2. Use on garlic bread, broiled oysters, baked fish, roast chicken, scrambled eggs, lamb, twirled with pasta--just use it, mmmkay?
