I'm very thankful for my time spent living in Texas, and there's one dip you must master while you live there. It originally has just two ingredients — processed cheese and canned tomatoes with chiles — but this is just the beginning. I've fortified this dip for cold nights and long games. Perfect for a big bowl of tortilla chips.

a slow cooker
  1. In a slow cooker with a browning function or a large pan on medium heat, add the sausage. Break up into bits and cook until browned, 7 to 9 minutes. Add the cumin, onions and red bell pepper. Cook until tender, then add to the slow cooker if cooking in a separate pan. Add the green chiles to the slow cooker along with the cheese and turn the heat to low. Stir intermittently until fully melted, about 45 minutes. Serve topped with the scallions, cilantro, if using, and an assortment of chips.
