Ingredients
- 3 tablespoons lime juice
- 1/4 cup chopped red onion
- 1/2 teaspoon ground cumin
- 1 tablespoon hot sauce (recommended brand: Frank's Red Hot)
- 1 stalk celery, chopped
- 2 roasted red peppers, finely chopped
- 1/4 cup cilantro, leaves only
- 2 (15-ounce) cans black-eyed peas, drained
- 3 tablespoons canola oil
- 2 teaspoons grated fresh ginger
- Salt and freshly ground black pepper
Directions
In a large bowl combine all ingredients and season with salt and pepper. Toss together and serve.

I love this dish. I don't like black eyed peas (nor does my family, but this changed our mind for the one time out of the year we eat them. Prepared it the day ahead to let the juices soak overnight, and we added 1 T apple cider vinegar and 1 T sugar to add more tang and sweetness.

I haven't thought about us eating this delicious salad since last New Year's day. I was unemployed last year...this year I have a new and prosperous career...A coincidence? I think not!!
