Ingredients
- 4 eggs
- 1 cup half-and-half
- 1/2 cup real mayonnaise
- 2 tablespoons flour
- 1/3 cup minced onions
- Salt and garlic powder
- 8 ounces shredded Swiss or sharp cheddar cheese
- 1 package frozen chopped spinach
- 1 (9-inch) unbaked pie shell
Directions
Preheat the oven to 350 degrees F. Hand whip eggs, half-and-half, mayonnaise, and flour in a medium mixing bowl. Add remaining ingredients. Pour into an unbaked 9-inch, deep pie crust. Bake for 45 minutes to 1 hour or until the top is golden brown.

This recipe was pretty good, but not perfect. I added my own flair: fresh parsley, and mushrooms (because I am obsessed with mushrooms. But I will say, I wish they had told me to saute the onions ahead of time. Its almost like they were too strong and uncooked. It wasn't horrible though, I still ate every last bite!

This is an excellent recipe. I made a few tweaks to suit our tastes and accommodate the ingredients we had on hand. I used skim milk instead of half and half, frozen broccoli (drained and chopped in small bits instead of spinach, and cholesterol-free mayo instead of regular mayo. Like other posters said, it's good to bake the crust for about 7 minutes before you add the filling; it keeps it from getting soggy. I planned to serve leftovers tomorrow, but my husband loved it, so not much of it is left! It was delicious.
