Ingredients

  • 4 eggs, lightly beaten
  • 1/4 cup orange juice concentrate
  • 1/2 cup milk
  • 1/2 cup finely ground pecans
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon cinnamon
  • Pinch of nutmeg
  • Ten 1-inch-thick slices of french bread

Directions

In a shallow bowl beat together eggs, orange juice concentrate, milk, pecans, vanilla, cinnamon and nutmeg. Dip bread into egg mixture, coating both sides. (soak for 30 seconds on each side). In a skillet melt 1 tablespoon butter and cook the bread on both sides over medium heat for 2-3 minutes on each side or until golden. Serve with butter, syrup, powdered sugar and sausage.

    I tried this recipe when I saw Emeril make it when he was on Food Network (quite awhile ago, now. I made this for 4 mentally challenged people and several staff and everyone loved this french toast. Obviously, caonoda, you don't know how to cook. This recipe was outstanding and I love Emeril who I watch on Planet Green now and also see him on the morning news shows. I have never been unhappy with Emeril's recipes. Emeril is the best and Food network lost one classy chef and he is a gentleman. 01/09/2011 Sunday.

    This was the worst French toast recipe I have ever tried. The pecans do not stay on the bread when cooking. There is not enough orange flavor. The toast slices are too thick to cook through well. --Every aspect of this recipe either didn't work or was bad. Do NOT try this recipe.
