Ingredients
- 2 hot house cucumbers, thinly sliced
- 2 fresh hot red chiles, thinly sliced
- 2 large handfuls fresh mint leaves
- 2 cups rice vinegar
- 4 teaspoons sugar
- Salt and freshly ground black pepper
Directions
Combine the cucumbers, chiles, and mint in a mixing bowl. Pour in the vinegar, sprinkle with the sugar, salt, and pepper. Toss everything together so the cucumbers are well coated with the vinegar. Refrigerate overnight if possible; the cucumbers will soften as they marinate and the flavors will deepen.

made this last night, and ate them tonight with dinner. was so delicious!! i loved that they were spicy! and the mint was great. i'm going to make this every summer. i love rice vinegar, being korean, so i would never use white vinegar! yuck! it's the rice vinegar that makes this recipe taste so asian and yummy. i did however use much less sugar than the recipe asked for.

I don't think we've had anything quite like these and we loved them! We made them with the chicken and noodles and it was all a great combination of salt sweet and spice!

I liked this recipe a lot. I think I would use regular vinegar next time, I did not like the taste of the rice vinegar.
