Directions
Soak 1/2 thinly sliced red onion in cold water. Pat dry 4 cups diced watermelon and 1 seeded and sliced cucumber; toss with a handful of thinly sliced mint. Drain the onion, squeeze dry and add to the salad along with some chopped cashews. Add 1/4 cup olive oil and the juice of 1/2 lemon; season with salt and toss. Top with crumbled goat cheese.

i made it but changed the dressing by using champagne vinagar instead if lemons.. i did not add cheese but every one loved it

I have made this for all of my friends now and everyone loves it. I have some very picky eaters in my family and to my amazement, they do love this salad. I have used feta and goat cheese and both are excellent choices. I did not however, add the cashews as I felt it had enough texture without them. This is cool, refreshing and totally different. This salad will be a summer time staple.

This salad is a little fiddly if you don't think to buy seedless watermelon (note to self... buy seedless watermelon next time! but it's so good, and surprisingly just as good the next day! I didn't change a thing (except I used cow feta instead of goat cheese as it was all I had.
