1/2 cup plain yogurt

1 small clove garlic, finely grated

Finely grated zest and juice of 1 lemon

Kosher salt and freshly ground black pepper

3 small cucumbers, such as Kirby, chopped

1 shallot, chopped (about 1/2 cup)

1/4 cup fresh dill

1/4 cup fresh mint leaves


  1. Stir together the yogurt, garlic, lemon zest and juice, 1 teaspoon salt and a few grinds of pepper in a medium bowl until combined. Add the cucumbers, shallot, dill and mint; stir until the cucumbers are well coated. Serve sprinkled with dill and mint.
