Minted Cucumber Salad

1 large European or seedless hothouse cucumber

1/2 cup plain yogurt

2 tablespoons minced fresh mint

1 clove garlic, minced

Salt and freshly ground pepper


  1. Cut the cucumber into thin slices and place them in a medium-sized glass salad bowl. Mix the remaining ingredients together and pour them over the cucumber slices. Cover with plastic wrap and chill for 1 hour. Serve chilled.
