Spiced Salmon Patties with Cucumber Salad

Salmon burgers are a great way to change up your weeknight fish routine. Salmon is simply pulsed in a food processor with cumin, sumac, lemon, scallions and fresh chilies before being formed into thin patties. Cooked for just a few minutes on the grill so they stay tender and moist, the patties are then served with a simple, refreshing cucumber salad, pita chips and tzatziki sauce. This is a great recipe to add to your simple and delicious summer cooking arsenal.

  1. Put the salmon in a food processor and pulse a few times. Add 3 sliced scallions, 2 teaspoons each cumin and sumac, the lemon zest, Fresno chile and 3/4 teaspoon salt and pulse a few times to combine. Form into four 4-inch-wide patties, about 3/4 inch thick. Put on a large plate and freeze while you preheat the grill and make the salad.
  2. Preheat a grill to medium-high. Make the salad: Whisk the lemon juice, olive oil, remaining 1/2 teaspoon each cumin and sumac and 1/4 teaspoon salt in a medium bowl. Chop the tomato and slice the cucumbers into half-moons. Add to the dressing, toss and season with salt and pepper.
  3. Brush the grill grates with olive oil. Grill the salmon patties until marked and just cooked through, flipping once, 3 1/2 to 4 minutes total; remove to a plate. Add the mint and remaining sliced scallion to the salad and toss. Serve the salmon patties with the salad, tzatziki, pita chips and pepperoncini.
