Since I already have several recipes using Dijon mustard, I decided to use regular yellow mustard and was pleased with the result. I did add a little more honey (to taste to sweeten the dressing. I served the dressing over a simple salad of romaine, baby greens, dried cranberries and candied walnuts.

I used 1 T of local sour-wood honey, 2 T of red wine vinager, 2 T of counry dijon mustard. I then used 4 T of EVOO but sunflower oil has worked nicely in the past.
