For the most-iconic green chile — and breakfast burrito — there’s really just one choice: Santiago’s, a homegrown chain that’s been doling out both across the state since 1990. The morning glories, sleeved in foil, are stuffed with scrambled eggs, fried potatoes, cheese and, depending on the day, chorizo, ham, sausage or bacon. As for that chile, it’s bewitchingly good, especially if you walk on the wild side and defer to the bombastically spicy version.
