Caipirinha

Hi, my name is Karl Franz, and I am the owner and head barman at 67 Orange Street and Solomon & Kuff’s Rum Hall in Harlem, New York City. I’m going to make a caiprinha, which is the national drink of Brazil, and uses cachaça, a sugarcane-based spirit.

Ingredients

Ice, cubes or crushed

1 ounce simple syrup, equal portions water and sugar

2 ounces cachaça, a spirit made from sugarcane, Avuà brand preferred

1/2 Lime, quartered, plus one quarter for serving

Directions

  1. Fill a serving glass with ice to chill. Set aside. In a cocktail shaker, add the simple syrup. Cut half of a lime into 4 quarters and add them to the simple syrup. Muddle the lime quarters into the simple syrup. This will release the lime juice and also release the oils from the peel. Add the cachaca to the simple syrup/lime mixture. Add ice, cover and shake. Pour the ice out of the chilled serving glass and pour the caipirinha in along with the ice that it was shaken with. Garnish with a fresh lime wedge and serve.
