Frozen Tropical Slushie

Ingredients

6 cups ice cubes, slightly crushed

3 cups cubed ripe pineapple

1 cup dark rum

1/4 cup honey

1 cup light coconut milk

1 cup fresh orange juice

1 cup fresh pineapple juice

Garnishes:

Lime wedges

Pineapple chunks

Orange wedges

Mango slices

4 bamboo skewers, soaked in water

Cocktail umbrellas

Directions

  1. Place the crushed ice in a blender. Add the pineapple cubes, dark rum, honey, coconut milk, orange juice and pineapple juice to the blender. Pulse until the mixture reaches a slushie consistency, about 15 seconds or pulses. Skewer the garnishes on the soaked bamboo skewers.
  2. Serve the slushie in chilled glasses with fruit skewers and top with umbrellas.

This is really good and I am not really into fruity drinks. One thing that would have made this a little easier would be to add the liquids to the blender then add just enough ice to fill the blender. I did it with ice first--the whole 6 cups like the recipe called for-- and it was too much for my blender to hold.
