Apple Grunt

Ingredients

1/4 cup butter

4 Granny Smith apples, peeled, cored, and sliced

1/2 cup brown sugar, firmly packed

Pinch nutmeg

1/4 teaspoon ground cinnamon

1/2 cup raisins

1/4 cup apple juice

1 tablespoon cornstarch

1 tablespoon water

3 ounces crushed granola

4 scoops vanilla ice cream

4 dollops whipped cream

4 maraschino cherries

Directions

  1. In a medium pan, melt the butter over medium heat. Add the apples and cook until browned. Add the brown sugar, nutmeg, cinnamon, raisins, and the apple juice and bring to a simmer. In a small bowl, combine the cornstarch and water and stir until the cornstarch is dissolved. Add the cornstarch slurry to the pan and bring to a simmer again. Cook while stirring until thickened, about 5 minutes.
  2. Divide the mixture among 4 serving bowls. Top each bowl with crushed granola, a scoop of ice cream, a dollop of whipped cream, and a cherry. Serve immediately.

Cook’s Note

This dish is better when the apple mixture is cooked 1 day in advance.
