Bacon-Wrapped Smokies

Ingredients

1/2 cup brown sugar

2 tablespoons paprika

1/2 teaspoon cayenne pepper

One 16-ounce package bacon

One 13-ounce package cocktail franks, such as Lit'l Smokies

Directions

Special equipment:
48 toothpicks, soaked in water for 15 minutes
  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, combine the brown sugar, paprika and cayenne pepper and mix well. Set aside.
  3. Slice the bacon strips into thirds. Wrap each frank with a piece of bacon, secure with a toothpick and place on a baking sheet. Repeat with the remaining franks and bacon. Thoroughly coat each bacon-wrapped frank in the brown sugar mixture and place back on the baking sheet.
  4. Bake until the bacon is crispy, 12 to 15 minutes. The rub has a lot of sugar in it, so make sure to turn halfway through the cooking process so the bottoms do not burn.

I make these for family gatherings but the past few times I’ve made them the mixture basically cooks off them and. They still have the flavor but look like plain bacon wrapped smokies.
