Banana Fritters

Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

Salt

Freshly ground white pepper

1/4 teaspoon ground cinnamon

Freshly grated nutmeg

1 egg

1 cup buttermilk

2 pounds bananas, peeled and cut into 3-inch chunks on the diagonal

Powdered sugar, for dusting

Directions

  1. Preheat a deep-fryer or a deep pot of oil to 350 degrees F. In a medium bowl, sift together the flour, baking powder, a dash of salt and pepper, cinnamon, and the nutmeg, to taste.
  2. In a small bowl, whisk together the egg and the buttermilk. Whisk into the flour mixture until smooth. Let rest for 30 minutes in the refrigerator.
  3. Dip the banana chunks in the batter and fry until golden brown, about 4 minutes. Remove and drain on paper towels. Dust with powdered sugar and serve.

I have "wowed" many of my friends with these fritters. They all love them and can't seem to get enough of them! I omit the white pepper though. I serve them with coconut ice cream then drizzle the whole plate with caramel sauce then dust it with powdered sugar. Its also good with vanilla ice cream too. Yum yum yum.
