Bernie's House Breakfast Sausage

Since Molly was little, she's always been more of a sausage person than a bacon person. These are the perfect combo of salty and sweet with a hint of maple syrup!

Ingredients

1 pound ground pork

1 tablespoon maple syrup

2 teaspoons coarsely ground fennel

1 1/4 teaspoons kosher salt, plus more to taste

1 teaspoon dried thyme

1 teaspoon freshly ground black pepper

1/4 teaspoon freshly grated nutmeg

1/4 teaspoon crushed red pepper flakes

1 tablespoon neutral oil, for frying, optional

Directions

Special equipment:
a 2-ounce ice cream scoop
  1. In a large bowl, add the ground pork. Using a spoon, spread out the meat to increase the surface area. Pour the maple syrup evenly over the meat, then sprinkle in the fennel, 1 1/4 teaspoons salt, dried thyme, black pepper, nutmeg and red pepper flakes. Use clean hands or a spoon to thoroughly combine, but not overmix.
  2. Line a baking sheet with parchment paper.
  3. Using a 2-ounce ice cream scoop, scoop out portions of the sausage mixture onto the prepared baking sheet. Flatten them to form 3-inch patties that are about 1/2 inch thick. Season with salt.
  4. Heat a large nonstick pan over medium heat. Cook the sausage patties for 3 to 4 minutes per side until cooked through, golden brown and crispy. Remove to a wire rack to cool and drain of excess oil. Serve hot.

I thought this was very good. I never realized how easy it is to make your own breakfast sausage. Will make fresh from now on. It has also inspired me to try out some of my own favorite seasonings. Great recipe!
