Black Forest Ham and White Bean Panini

Ingredients

1 cup canned white beans, drained

2 tablespoons extra-virgin olive oil

2 tablespoons grated Parmesan

1/2 teaspoon dried oregano

1/4 teaspoon kosher salt

Freshly ground black pepper

4 (6-inch) whole wheat pita breads, halved lengthwise and separated

8 ounces thinly sliced Black Forest ham

1 plum tomato, thinly sliced

Olive oil cooking spray

Directions

  1. In a small food processor, puree the beans with the olive oil. Stir in the Parmesan, oregano, salt and pepper.
  2. Spread the bean mixture over the bottom half of each pita, then layer the ham and tomato slices. Top with the remaining pita halves.
  3. Heat a large nonstick griddle. Lightly spray griddle with olive oil spray. Place each of the sandwiches, with the cheese side down, onto the hot griddle. Place an aluminum foil wrapped brick on top of each of the sandwiches. Grill for about 1 1/2 minutes on the first side. Flip the sandwiches and grill for about another minute. Remove from griddle and serve hot.

The bean spread was a little bland, so I added extra black pepper, 1/2 tsp garlic, and a little tobasco to spice it up some. And, it was wonderful. Whatever you do -- do not use too much salt! The ham is salty and it adds that extra flavor the sandwich needs.
