Broccoli and Sausage with Shells

Ingredients

2 tablespoons olive oil

1/2 pound spicy sausage, removed from casings and crumbled

2 cloves garlic, finely chopped

1 teaspoon red pepper flakes

1 head broccoli, cut into florets

3/4 cup chicken stock

12 ounces cooked small pasta shells

Salt and pepper

4 thin slices white bread, toasted and diced

1/2 cup grated parmesan

Directions

  1. Heat oil in a large non-stick skillet over medium high heat. Add sausage and garlic and cook until sausage is no longer pink. Stir in pepper flakes and broccoli florets. Pour in chicken stock, bring to a simmer and cover. Cook until broccoli is barely tender-- about 1 minute. Remove lid and stir in cooked pasta and toss to coat. Season with salt and pepper. Serve warm and garnish with toasted bread cubes and grated parmesan.

The nice thing about this website is that you can type in a few ingredients and get recipes that use those ingredients. That's what I did here. But I had sweet italian sausage (Premio brand) and so that is what I used. And having read the prior reviews, I added some sesame seed oil to the saute pan, 1/2 cup extra of chicken broth, some fresh parsley, and parmesan cheese. Plus I omitted the red pepper flakes. I used whole wheat pasta and put a lot of salt in the water when cooking. This dish was soooo good. I can see substituting zucchini for the broccoli in the future. Worthy of repeating.
