Brussels Sprouts with Chocolate Port Sauce

Ingredients

1 1/2 pounds Brussels sprouts, trimmed

3 tablespoons olive oil 

Kosher salt and freshly ground black pepper

1 tablespoon unsalted butter 

1 tablespoon minced shallots 

1/2 cup port wine 

1 tablespoon balsamic vinegar 

1 teaspoon fresh thyme leaves, minced 

1/2 cup vegetable broth 

2 tablespoons finely chopped bittersweet chocolate 

1 tablespoon honey 

Directions

  1. Preheat the oven to 400 degrees F.
  2. Place the Brussels sprouts on a baking sheet and toss with the oil, 1 teaspoon salt and 1/2 teaspoon pepper. Roast until tender and browned, 20 to 25 minutes.
  3. Meanwhile, melt the butter in a small saucepan over medium-high heat. Add the shallots and cook, stirring often, for 1 minute. Stir in the port, vinegar and thyme and boil until syrupy, about 5 minutes. Stir in the broth and bring to a simmer. Whisk in the chocolate and honey and simmer until reduced by half, about 10 minutes. Season with salt and pepper.
  4. Transfer the Brussels sprouts to a serving bowl and drizzle with the sauce.
