Ingredients

8 slices Challah bread

1/2 cup cherry all-fruit jelly or jam

1/2 cup ricotta cheese

2 tablespoons unsalted butter

2 large eggs

Confectioners sugar and cocoa powder, for dusting

Directions

Special equipment:
Rolling Pin Medium shallow dish Fork or whisk Medium skillet Spatula Fine mesh strainer
  1. Flatten each slice of bread with a rolling pin. Place a tablespoon of the jelly and the cheese in the center of each bread. Fold the bread in half, over the jelly and cheese, to make a turnover. Press the edges together lightly with a fork to seal the turnovers. Break the eggs into a shallow bowl and stir with a fork or whisk.
  2. Melt a small piece of butter in a medium skillet over medium-low heat. Dip 2 turnovers in the egg mixture and then lay them in the pan. Fry the turnovers for 3 to 4 minutes per side or until golden brown. Use a flat spatula to transfer the turnovers to paper towels to drain. Cool slightly. Repeat with the remaining turnovers.
  3. Put a couple spoonfuls of confectioners sugar and cocoa into a fine strainer. Shake the strainer over the turnovers to dust with sugar and cocoa. Serve.
