Chicken Thai Sausage with Thai Salsa

Ingredients

5 medium tomatoes, diced

Salt, for sprinkling

3/4 cup sweet chile sauce

1/2 cup chopped fresh cilantro

1/2 cup diced red onions

1/4 cup chopped fresh Thai basil

3 cloves garlic, pressed

1 lime, juiced

2 pounds chicken Thai sausage links, from your local butcher

6 buns from your local bakery

Directions

  1. Salt the tomatoes; let sit for 1 hour.
  2. Drain the water off the tomatoes, then add the tomatoes to a mixing bowl. Add the chile sauce, cilantro, onions, Thai basil, garlic and lime juice; mix.
  3. Boil the sausages to an internal temperature of 165 degrees F.
  4. Grill or pan-fry the sausages to crisp them. Place in the buns, then add the Thai salsa and enjoy!
