Chocolate Oatmeal Raisin Cookies

Ingredients

1 (22 1/2-ounce box) brownie mix

1/3 cup vegetable oil

2 large eggs

2 1/2 cups quick-cooking oats

1 cup raisins

Directions

  1. Preheat oven to 350 degrees F.
  2. Lightly coat baking sheets with cooking spray or line with parchment.
  3. In a large mixing bowl, combine all ingredients with a wooden spoon.
  4. Drop by heaping tablespoons onto prepared baking sheets. Bake until set, about 17 to 20 minutes.
  5. Remove from oven and cool on baking sheet for 5 minutes before transferring to cooling racks.

These did not turn out well. The batter was much too dry so I added an additional egg and more oil. But that did not help much; they still baked up hard and dry.
