Chocolate Sour Cream Marble Cake

Ingredients

4 ounces butter

1 cup sugar

2 egg yolks

1 1/4 cups all purpose flour

2 teaspoons baking powder

1/2 cup sour cream

2 tablespoons half and half

2 egg whites

1/4 cup sugar

1/4 cup cocoa powder

1/4 cup coffee

1 pinch baking soda

Directions

  1. Preheat oven to 350 degrees. Cream butter and sugar until fluffy. Add yolks, incorporating well.
  2. Sift together flour and baking powder. On low speed add flour to butter mixture alternating with sour cream and half and half. In a clean bowl, whip whites until stiff. Gradually add sugar and whip until glossy. Fold into batter. In separate bowl stir together cocoa, coffee and baking soda. Take off 1/3 of the batter and stir in cocoa mixture. Drop spoonfuls of each colored batter into 6 nonstick mini bundt cake pans. Bake at 350 for 35 to 40 minutes or until firm to the touch. Let cool in pan then turn out. Serve with warm chocolate sauce and banana-walnut ice cream

3.5 stars, the recipe was one of the easiest for marble cakes I've seen. It lacked a bit a flavor as seems to happen with marble cake. The chocolate batter could have been a little more chocolatey, maybe add a little good quality grated semi-sweet chocolate? It also made about 7 cups total batter, and my mini-bundt pan is 6 cups.  I even filled them up all the way with batter, not a great idea, and still had 2 cupcakes-worth leftover. Overall the yellow batter was pretty good & I'd make it again w/a few flavor-boosting tweaks bc it's so easy.
