I've made truffles the real way with heavy cream and butter and I have to say, these turn out very yummy. I did add 2 tablespoons of butter at the end with the vanilla, just to add a rich creaminess ans shine. I made these truffles for my valentine and he loves spicy flavors so I added a teaspoon of cayanne to the mixture while the chocolate was melting. I rolled them in finely chopped pecans for texture and YUM! Perfect amount of heat for that amount of chocolate.
