Mini Fried Candy Bars

Ingredients

Mini candy bars, such as Twix, Mars, Snickers or Almond Joy

1 whole egg

1 cup milk

Pinch salt

1 1/2 cups self-rising flour

Peanut oil, for frying

Directions

  1. Freeze the mini candy bars.
  2. Combine the egg and milk in a large bowl and add a pinch of salt. Whisk in the flour and refrigerate, covered, for at least 30 minutes.
  3. Heat about 4 cups of oil in a large pot to 365 degrees F.
  4. Dunk the frozen candy bars into the chilled batter, and then gently drop them, in batches into the oil. Cook just until light golden in color, then remove them to a brown paper bag to drain and cool for at least 1 minute.

Not great. About as bad as fried candy bars can be. The coating was soggy and chewy. I would have fried longer, but the candy bars were starting to melt and leak. Next time I'm going to try substituting 1/2 corn starch for the flour, and 1/2 vodka for the milk, for less gluten formation, in the hope that they will have a lighter and crispier coating. I will also use regular flour, baking powder, and salt instead of self-rising flour, which I'm assuming is only used in this recipe so that it comes in under "5 ingredients".
