Cranberry Pie

Ingredients

3 1/2 cups cranberries, chopped

1 1/2 cups sugar

1 1/2 tablespoon flour

1/4 teaspoon salt

3 tablespoons water

3 tablespoons melted butter or margarine

1 (9-inch) pie crust and 1 crust for top

SERVE

Orange sherbet

Directions

  1. Mix all ingredients, then add to pie crust. Add top crust and prick with fork. Preheat oven to 450 degrees F and bake pie 10 minutes. Lower temperature to 350 degrees. Bake 40 minutes more.

Everyone loved this pie for Christmas, much to my surprise as cranberries seem to be one of those foods not everyone is crazy about. My sister-in-law, who is not a dessert person, cut her first slice before dinner because the pie looked pretty, had a second one on her plate with dinner, and a third for dessert. There was still a little left for the rest of us. The hardest part of making this pie is chopping the cranberries, which wanted to roll off the cutting board, behind the toaster and onto the floor. Next time I might try a food processor for that task, although I'd worry about pulverizing them too much. But in general, if you're skeptical about cranberry pie don't be. This one tastes delicious.
