Cranberry Pie

Ingredients

2 cups fresh or frozen cranberries

1 1/2 cups sugar

1/2 cup chopped walnuts

2 eggs

1 cup flour

1/2 cup unsalted butter, melted

Maple syrup

Sweetened whipped cream

Directions

  1. Preheat oven to 325 degrees F.
  2. Spread cranberries in a buttered 10-inch pie plate. Sprinkle with 1/2 cup sugar. Sprinkle with walnuts. In a bowl combine eggs and remaining 1 cup sugar. Add flour and butter and stir. Pour batter over cranberries.
  3. Bake for 50 to 60 minutes or until the top is brown and a tester comes out clean.

This "pie" (really a cake in a pie pan) was not too bad, but not outstanding either. It was kind of a strange taste combination since the walnuts and sugar combined to give it a coffee cake type flavor. This didn't go perfectly with the cranberries. But my love for sweets meant it I ate it anyway.
