Blue Cheese Buffalo Pork "Wings"

Ingredients

Four 1-inch-thick boneless pork chops

1/4 cup blue cheese powder 

4 teaspoons black pepper 

2 teaspoons kosher salt 

12 thin slices bacon 

4 tablespoons butter

4 tablespoons hot sauce 

1 teaspoon garlic powder 

1/2 teaspoon cayenne 

Directions

Special equipment:
twelve 8-inch skewers, soaked in water for 20 minutes
  1. Preheat the oven to 350 degrees F.
  2. Cut each pork chop lengthwise into 3 pieces. Combine the blue cheese powder, black pepper and salt in a bowl. Sprinkle the pork "wings" on all sides with the spice mixture. Wrap each wing in a single layer with a strip of bacon and secure with a skewer; the skewers should stick out about 3 inches.
  3. Place the wings on a baking sheet and bake until the bacon is crispy and the pork registers 145 degrees F on a digital thermometer, 45 to 55 minutes. Flip the wings about two-thirds of the way through to brown both sides -- keep an eye on the wings, and flip earlier if they are browning too quickly on the bottom.
  4. Meanwhile, whisk together the butter, hot sauce and garlic powder in a small saucepan over medium heat. Bring to a boil and cook for 1 to 2 minutes. Stir in the cayenne, then remove from the heat.
  5. When the wings come out of the oven, brush them generously with the Buffalo sauce. Serve immediately with any remaining sauce.

To start: We loved these but due to the fact that I was making during the pandemic and I was limited by the ingredients I could get I had to vere off the track a bit. I don't like to do that the first time I prepare a new recipe because I don't think it's fair to review a recipe unless you make it the way it is called for in the original but desparate times call for desparate measures. So to the previous cooks who reviewed this I say thank you for the good ideas. I used powdered ranch dressing and had to switch to our favorite prepared BBQ sauce instead of the hot sauce. Other than that everything was the same with the exception of the use of skewers. I even added the butter, garlic powder and cayenne to the sauce. I now can't wait to make them again. So easy and so good. Didn't use the skewers because this was for the family as part of dinner instead of an appetizer. YUM!
