Turkey Gravy

Ingredients

4 tablespoons unsalted butter

6 tablespoons all-purpose flour 

4 cups turkey stock, warmed 

1/4 cup white wine 

Kosher salt and freshly ground black pepper

Directions

  1. Melt the butter in a skillet over medium heat. Whisk in the flour and cook until golden, 1 to 2 minutes. Whisk in the warmed stock. Bring to a simmer and cook, stirring constantly, until thickened, 10 to 15 minutes. The mixture should coat the back of a spoon. Pour in the wine, stir and cook for an additional 2 to 3 minutes. Season to taste with salt and pepper.

For an uncomplicated gravy, this is quite delicious.  I made it a day ahead and then stirred in just a small amount of the minimal drippings our turkey breast created.  This may be my go-to turkey gravy from now on.
