Five-Onion Dip

Between shopping, cooking and hosting, we all have enough to handle during the holidays. This dip is the perfect fuss- free, crowd-pleasing appetizer!

Ingredients

2 tablespoons unsalted butter

3 green onions, finely chopped

1 medium red onion, diced

1 medium Vidalia onion, diced

1 small white onion, diced

2 tablespoons packed brown sugar

3 tablespoons white wine vinegar

1 tablespoon Worcestershire sauce

8 ounces cream cheese, at room temperature

2 cups sour cream

1 cup mayonnaise

2 tablespoons chopped fresh chives

1/2 cup grated Parmesan cheese

Crostini or crudités, for serving

Directions

  1. Preheat the oven to 400˚ F. Melt the butter in a cast-iron skillet over medium heat. Add the green onions, red onion, Vidalia onion, white onion and brown sugar and sauté, stirring occasionally, 10 to 15 minutes. Add the vinegar and Worcestershire sauce and cook until the onions are very soft and a caramel color, 4 to 5 minutes. Stir in the cream cheese until it is melted into the onions. Remove the mixture to a large bowl, then stir in the sour cream, mayonnaise and chives.
  2. Transfer the dip to an 8-inch square baking dish; top with the Parmesan. Bake until bubbling, 15 to 20 minutes. Serve with crostini or crudités.

This is a delicious dip, sweet but not too sweet and creamy - even my grandson’s liked it! Everyone said it needs to become a staple for holidays and family gatherings! I couldn’t find Vidalia onions so I substituted a sweet yellow onion and it worked out just fine. I also substituted seasoned bagel crisp rounds for the baguette - also worked out well. I baked it a little longer then was stated in the recipe but that was because of the way my oven cooks and I wanted that golden brown top. You will not be disappointed if you make this - it will be a hit!
