Flaming Bananas Foster with Vanilla Ice Cream and Honey Sea Salt Peanuts

Ingredients

1 cup roasted unsalted peanuts

1 cup honey

Sea salt

4 tablespoons unsalted butter

1/4 cup packed brown sugar

1 1/2 teaspoons ground cinnamon

6 firm bananas, sliced

6 to 8 scoops good quality vanilla ice cream

4 tablespoons dark rum (recommended: Myers's)

Directions

  1. Combine the peanuts and honey in a small bowl and season with salt, to taste. Set aside.
  2. In a large skillet over medium heat, add the butter, sugar and cinnamon, stirring to combine until the sugar melts, about 3 minutes. Add the bananas and saute until a thick caramel coats the bananas and they begin to soften, about 3 to 5 minutes. Divide the ice cream evenly among serving bowls, spoon honey nuts over the ice cream and top with a light sprinkle of sea salt. Add the rum to the pan with the bananas and carefully ignite with a torch lighter, match, or by gently tipping the pan into the burner flame. Shake the pan until the flames subside. Spoon the bananas over ice cream and peanuts and serve.

I used this recipe as a base..but with alterations. I skipped the peanuts as that part did not appeal to me , or my guests. The carmel ~ rum sauce is indeed very easy, and impressive , if done table-side with a chafing dish, or, (as in my case), done in the center of a large kitchen island. <br /> <br />I initially made the recipe as written, but the bananas, though very firm, still ended up too mushy--almost like a soup. So-- I froze the banana slices, and wow! They ended up even a bit crispy. Great texture, given that I skipped the peanuts. I also did this with pinealle, as several guests don't like bananas. I'm wondering if pears or peaches would work in different seasons. <br /> <br />I also put this dessert atop a slice of pound cake, (home-made), but surely Sara Lee would work as well. <br /> <br />Delicious, and I am now asked to bring the dessert when invited to a dinner party!
