Ingredients
1 2/3 cups plus 2 tablespoons warm water (around 80 degrees F)
2 tablespoons vegetable oil
1/4 cup light brown sugar
1/4 cup nonfat dry milk powder
2 teaspoons kosher salt
3 cups (12 ounces) whole-wheat flour
1 1/2 cups (6.4 ounces) bread flour
One 1/4-ounce packet instant yeast
Directions
Special equipment:
a 2-pound capacity bread machine- Add the dough ingredients to the bread pan of a 2-pound capacity bread machine in the following order: water, oil, brown sugar, milk powder, kosher salt, whole-wheat flour, bread flour and yeast. Program the machine for whole-wheat bread, 2-pound setting (or just the dough setting, depending on your machine) and start the cycle (see Cook's Note).
- Once the cycle is complete, immediately remove the bread from the pan and cool completely on a rack.
Cook’s Note
When measuring flour, we spoon it into a dry measuring cup and level off excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.) Settings, cycles and timing may vary on your bread machine depending on the model. Refer to the manufacturer's guide and pay attention to visual cues for proofing. We tested this recipe using a Cuisinart Compact Automatic Bread Maker, Model CBK-110.
