Fruity Irish Soda Bread

Ingredients

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon allspice

1/2 teaspoon salt

2 tablespoons cold unsalted butter

2 tablespoons cold vegetable shortening

1 egg, beaten

1 cup buttermilk

1/4 cup dried figs

1/4 cup dried cranberries

1/4 cup toasted walnuts

Directions

  1. Preheat the oven to 375 degrees.
  2. In a large bowl, combine the flour, baking powder, baking soda, allspice and salt and mix well. Cut the butter and shortening into small pieces and add to the flour mixture. Using your fingers, work the cold butter and shortening into the flour mixture until it resembles coarse crumbs. Add the egg, the buttermilk, the dried fruit and the walnuts and mix into the flour mixture until it is incorporated. Turn the dough out onto a floured surface and knead gently until the dough forms a smooth ball. Shape the dough into a round loaf. Place the dough onto a lightly oiled baking sheet. Score the top of the loaf with a very sharp knife. Place the loaf in the oven and bake for 40 to 45 minutes or until golden brown.

This bread was so easy to make and tasted great. I was concerned that it wouldn't be sweet because there is no sugar in the recipe but the fruit makes it sweet. I love that little hint of spice from the allspice. The crust was pretty hard but the inside was so soft, almost like cake. I will definitely make this again!
