Garlic Shrimp

Ingredients

1/3 cup extra-virgin olive oil

3 dried chiles de árbol 

1 1/4 pounds large shrimp, peeled and deveined

Kosher salt

6 cloves garlic, minced

2 tablespoons dry sherry 

1 tablespoon fresh lemon juice 

Chopped fresh parsley, for topping

Lemon wedges, for serving

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chiles and shrimp; season with salt. Cook until the shrimp are pink, about 2 minutes per side. Add the garlic; cook 30 seconds.
  2. Carefully add the sherry and lemon juice to the skillet and cook 30 seconds; season with salt.
  3. Top with chopped parsley. Serve with lemon wedges.
