Ingredients
1/4 cup extra-virgin olive oil, plus more for the grill
2 cups canned cooked lentils, drained and rinsed (from two 15-ounce cans)
2 carrots, grated
2 plum tomatoes, finely chopped
1 fennel bulb, finely chopped, plus 1/2 cup chopped fronds
1/2 shallot, grated
1 cup chopped fresh parsley
1/4 cup white wine vinegar
Kosher salt and freshly ground pepper
1 piece kielbasa sausage (12 to 14 ounces)
Sliced baguette, for serving
Dijon mustard, for serving
Directions
- Preheat a grill to medium and oil the grates. Combine the lentils, carrots, tomatoes, fennel and fennel fronds, shallot, parsley, vinegar and olive oil in a medium bowl. Season with salt and pepper and toss well to combine.
- Place the sausage on the grill and cook, turning occasionally, until lightly charred and heated through, 8 to 10 minutes. Slice the sausage and divide among plates along with the lentil salad. Serve with bread and mustard.
