Grilled Mushroom Kebabs

Directions

  1. Toss 12 ounces trimmed mixed mushrooms with olive oil, salt and pepper. Thread onto 4 skewers, alternating with Peppadew peppers. Grill over medium heat, turning, until tender, 10 to 12 minutes. Grill 4 scallions, then chop and whisk with 3 tablespoons each olive oil and chopped parsley, 2 tablespoons red wine vinegar and 1 tablespoon chopped Peppadews. Drizzle over the kebabs.

This side dish is very good and easy.  We grilled the kebabs alongside two steaks and also had a BLT Salad.  I used 16 medium-size white mushrooms and 16 peppers.  After the kebabs were grilled, I removed everything from the skewers and stirred in the oil and vinegar mixture in a medium bowl.  We really like Peppadew peppers and this was a good way to use them.
