Ingredients
2 cups milk, such as whole milk, unsweetened almond milk or unsweetened oat milk
2 cups steel-cut oats
1/4 cup maple syrup or packed light brown sugar, plus more for serving
2 teaspoons ground cinnamon, plus more for serving
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract, optional
Toasted nuts, such as almonds, walnuts or pistachios, for serving
Fresh fruit, such as bananas, mango or berries, for serving
Directions
Special equipment:
6-quart Instant Pot® multi-cooker- Combine the milk, oats, maple syrup, cinnamon, salt and 2 cups water in a 6-quart Instant Pot® multi-cooker (see Cook's Note). Stir well until evenly combined (this will prevent the oats from sticking to the bottom of the pot). Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 4 minutes.
- After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Add the vanilla extract, if using. Give the oats a good stir with a wooden spoon or rubber spatula; the oats will look soupy, but will quickly come together and thicken after stirring.
- Spoon into serving bowls, top with a drizzle of maple syrup or a sprinkle of brown sugar, a sprinkle of cinnamon and toasted nuts and fruit of your choosing. Refrigerate any leftover oatmeal for up to 4 days (see Cook's Note).
Cook’s Note
Settings may vary on your Instant Pot® depending on the model. Please refer to the manufacturer's guide. Heat leftover oatmeal in the microwave in 30-second increments, stirring between each, until warmed through, 1 to 2 minutes. If you want creamier oats, add a splash of milk once reheated and stir well.
