Ingredients

One 15.25-ounce box yellow cake mix

2 large eggs, lightly beaten

5 tablespoons unsalted butter, melted

2 cups dark chocolate chunks or discs

1/4 cup rainbow sprinkles

1/2 cup cornflakes

1/2 cup crushed pretzels

Directions

  1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
  2. Stir together the cake mix, eggs, butter and 1/4 cup water in a large bowl with a wooden spoon or rubber spatula until smooth and combined. Stir in the chocolate and sprinkles until they are completely coated, then gently fold in the cornflakes and pretzels.
  3. Scoop the dough onto the lined baking sheets using a 2-ounce ice cream scoop or a large spoon, about 2 inches apart (6 per sheet). Bake, rotating and switching the positions of the baking sheets halfway through, until the cookies start to turn golden brown on top, 8 to 10 minutes Repeat with the remaining cookie dough.
  4. Let cool slightly and serve, or cool completely and store in an airtight container up to 5 days.

Made the cookies and my family and friends loved them and requested the recipe. Did not have any issues, such as dryness, as described in some reviews. I thought they would brown on top when baking and wondered if they were done the first time I made them. The cookies did not brown when baking. They have a softer center. Experimented with baking a little longer, then turning off the oven and leaving cookies in the turned off oven for a few minutes. Cookies become crisp and brown on top when we did that and they are good that way too.
