Chipotle Spice Blend:

1 tablespoon sugar

2 to 3 teaspoons chipotle powder

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon freshly grated lime zest

1/4 teaspoon granulated garlic

Kosher salt

Nuts:

Vegetable or canola oil, for the baking sheet

1 large egg white

1 cup unsalted raw almonds

1 cup unsalted raw cashews

1 cup unsalted raw peanuts

1 cup unsalted raw pecans

1 cup potato chips

Directions

  1. Mix together the sugar, chipotle powder, coriander, cumin, lime zest, granulated garlic and 1 1/2 teaspoons salt in a small bowl and set aside.

For the nuts:

  1. Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet with the oil.
  2. Put the egg white in a large bowl and whisk until frothy. Add the nuts and potato chips and toss to coat in the egg white. Add the spice blend and toss to coat.
  3. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.
