- Beat 8 ounces softened cream cheese and 6 tablespoons softened butter with 1 cup confectioners' sugar, 1 teaspoon lemon zest and 1/2 teaspoon vanilla until fluffy. Spread the frosting on prepared muffins (such as zucchini, banana or carrot). Top with candied ginger or walnuts.
