Ingredients
1 cup granulated sugar
1 1/2 cups fresh cranberries
2 cups mini pretzel sticks
2 cups rice cereal squares (such as Chex)
2 cups salted peanuts
4 tablespoons salted butter, melted
2 tablespoons packed light brown sugar
Kosher salt
Directions
- Combine 1/2 cup each granulated sugar and water in a medium saucepan. Bring to a boil, then remove from the heat and stir in the cranberries. Cover and let the cranberries soak in the syrup, about 1 hour.
- Drain the cranberries and transfer to a large bowl along with the remaining 1/2 cup granulated sugar. Toss to coat the cranberries in the sugar. Transfer to a baking sheet and spread in a single layer. Let dry at least 4 hours.
- Meanwhile, preheat the oven to 350 degrees F. Toss together the pretzels, cereal, peanuts, melted butter, brown sugar and 1 teaspoon salt in a large bowl. Spread in an even layer on a separate baking sheet and bake, stirring occasionally, until crisp, about 25 minutes. Let cool on the baking sheet.
- Transfer the snack mixture to a serving bowl. Add the sugared cranberries and toss to combine.
