Directions

  1. Grate the zest of 2 limes; set aside. Squeeze the juice into a saucepan; add 8 thin slices ginger and 2 cups unsweetened pineapple juice. Boil until reduced to 1/2 cup, 8 to 10 minutes. Strain, then add the lime zest, 1 cup apricot preserves and 1/4 cup dijon mustard.

This is a complete winner. I used it as a light gravy over a pork tenderloin (that had been baked in a simple apricot glaze and all my guests couldn't get enough of it. People started pouring it over mashed potatoes and dipping everything on the plate in it. A little goes a long way. It adds the finishing touches to those fancy meals that involve stacking your food (potatoes on the bottom, carrots or asparragus in the middle, slices of pork tenderloin on top. Just pour a little of this glaze across the plate and wow! Delicious!
