Prosciutto, Fig and Blue Cheese Crostino

Creamy blue cheese spread on toasted bread and topped with prosciutto, figs and honey.

Ingredients

3 ciabatta rolls, sliced in half horizontally

3 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper

6 ounces mild creamy blue cheese, such as Maytag

4 ounces thinly sliced prosciutto

6 fresh Turkish figs, quartered

Wildflower honey, for drizzling

3 sprigs thyme

Directions

  1. Preheat the oven to 400 degrees F.
  2. Place the bread on a baking sheet, brush with the olive oil and season with salt and pepper. Toast until golden around the edges, 8 to 10 minutes.
  3. Spread each piece of bread with some of the blue cheese and divide the prosciutto and figs among them. Drizzle with honey and scatter thyme leaves over the top. Transfer to a platter before serving.
