Ranch Potato Salad

Ranch dressing is a big favorite in our test kitchen and makes the perfect base for this creamy and flavorful potato salad. Ranch is a great timesaver here since it combines mayonnaise, vinegar and herbs—all the ingredients you need for a top notch potato salad.

Ingredients

2 pounds Yukon Gold potatoes, peeled and cut into chunks

Kosher salt and freshly ground pepper

1/2 English cucumber, chopped

1/4 red onion, finely chopped

1/2 cup chopped parsley

3/4 cup ranch dressing

Directions

  1. Put the potatoes in a pot, cover with water and season with salt. Bring to a boil, then simmer until tender, about 12 minutes; drain and let cool.
  2. Transfer the cooled potatoes to a bowl and toss with the cucumber, red onion, chopped parsley and ranch dressing. Season with salt and pepper. Chill at least 1 hour.

This is certainly better than anything I have bought from the store…which I usually do.<br /><br />I’m a bit salt-averse because better not enough and still be able to add at the table. Anyway, the finished salad was a little bland so some more salt brought it up to speed.<br /><br />The flavors in the salad will continue to marry and develop so I’m looking forward to the next meal!<br /><br />Oh yes, dill is a great addition!
