Spicy Escarole with Garlic

Directions

  1. Cook 3 minced garlic cloves in a skillet with olive oil until golden. Add a few pinches of red pepper flakes. Stir in 1 head torn escarole in batches, season with salt and toss. Cover and cook until the greens are wilted, 5 minutes.

It was pretty good, not something I'd crave to do again exactly like the recipe.  There are a few tweaks that I think would have really made it pop, or given a stronger savory flavor, more seasoning to make it spicier, or frying bacon, using the grease for the caramelizing and crunching up the cooked bacon to sprinkle on it would have made it amazing.  Next time I do it, will likely add a little more flair. (NOTE: I live in an area where things are heavily seasoned and spicy is a matter of subjectivity)
