  1. Saute zucchini, yellow squash and scallions in olive oil until tender. Toss with cooked orzo, parsley, dill, goat cheese, salt and pepper.

I remembered this salad from ages ago.  I love the earthy flavor. I didn’t have dill so I used a  celery salt to season the squash while I warmed it.   Delicious.
