Stir-Fried Asparagus

- Cook 2 bunches asparagus (cut into 1-inch pieces) in a skillet with 2 tablespoons olive oil over high heat, tossing, 2 minutes; remove to a plate and season with salt. Add 1 tablespoon oil, 1/2 minced Fresno chile, 2 teaspoons minced ginger, 2 minced garlic cloves and 1 bunch scallions (cut into 1-inch pieces) to the pan; cook 30 seconds. Add the asparagus and 2 tablespoons soy sauce and toss.
